MONDAY, MARCH 05, 2012 Zesty Jalapeno GazpachoIngredients: 8 Roma Tomatoes finely chopped or pulsed in a food processor to rough chop 2 green bell peppers, finely chopped or pulsed in food processor to rough chop 2 red bell peppers, finely chopped or pulsed in food processor to rough chop 2 cucumbers, peeled & finely chopped or pulsed in food processor to rough chop 2 red onions, finely chopped or pulsed in food processor to rough chop 2 garlic cloves, minced 1/2 cup fresh chopped parsley 2 Tbls: Rossi Pasta: Veggie Spice Mix 1 cup Jalapeno White Balsamic 1 cup Tuscan Herb Extra Virgin Olive Oil salt & pepper to taste 1/4 cup bread crumbs 2 cups vegetable juice Method: Combine vegetables in large bowl. Whisk vinegar, salt & pepper & veggie spice in small bowl and pour over vegetables. Marinate, covered for 12 hours. After 12 hours, Stir in Olive Oil & Bread Crumbs and vegetable juice.
