FRIDAY, APRIL 15, 2011 Roasted Basil Shrimp BurritosIngredients: 1lb large shrimp (21/25's) peeled with tail off 2 tablespoons: Coronado Taste of Oils Basil EVOO 2 cloves garlic minced 2 tablespoons: Coronado Taste of Oils Tangerine Balsamic vinegar 1 bag fancy greens 2 avocados sliced soft Goat cheese sliced 8 inch flour tortillas cooking steps: 1) Toss shrimp with 2Tbls Basil EVOO and garlic and roast in oven @ 400 degrees for 6-8 minutes 2) Toss greens with 2 Tbls Tangerine Balsamic 3) Fill each tortilla w/3 cooked shrimp, greens, avocados and goat cheese Posted At 12:04 PM Labels: basil olive oil tangerine balsamic
