Chocolate and Blood Orange Cupcakes

Ingredients:

1 1/2 cups flour

1 cup sugar

1 teaspoon baking soda

1 teaspoon salt

1/3 cup cocoa powder

1/2 cup Coronado Taste of Oils Blood Orange olive oil

*1 cup cold coffee

1 teaspoon Coronado Taste of Oils Dark Chocolate balsamic vinegar

Method:

Mix together all of the ingredients with a mixer until there are no lumps.  Bake at 350 degrees F for 25 minutes.  Dust with powdered sugar or frost as desired. 

*Buttermilk or milk may be substituted for coffee.
