Pineapple Chipotle BBQ ChickenRoberta
Time to dust off that BBQ and welcome the warm days of Spring!
- ¼ cup + 2 T. Chipotle Olive Oil
- ½ cup Pineapple Balsamic
- 2 T. Minced garlic
- ¼ soy sauce
- 1 cup ketchup
- 1 20oz can crushed pineapple (drained)
- 1 cup honey
- 1 chipotle pepper in adobo sauce minced (optional)
- 12 chicken thighs (bone-in & skin on)
Preheat oven: 400 degrees. Rinse and pat dry chicken. Season with salt & pepper, place in Ziploc bag and marinate with ¼ cup Chipotle Olive Oil. (at least 4 hours). Transfer to large baking dish and bake chicken 1 hour. In medium sauce pan, sauté remaining 2 T. Chipotle olive oil and garlic until golden. Whisk in ketchup, honey, balsamic, soy sauce and crushed pineapple and simmer for 15 minutes. Remove skin from cooked chicken and toss with desired amount of Pineapple BBQ sauce and serve over rice. (save extra BBQ sauce for later)
