Very Berry Salad w/ Lemon MascarponeRoberta
We have had so many requests for a berry salad this summer…and here it is!
Ingredients for your “Very Berry Salad with Lemon Mascarpone”:
- 8 pints of blueberries, hulled or halved strawberries, raspberries, blackberries, or any combination
- 2 1/2 teaspoon Raspberry Balsamic Vinegar
- 2/3 cups sugar (2 T agave may be used in place of sugar)
- 8 ounces mascarpone
- 2 tablespoons Lemon Olive Oil
- 1 tablespoon Honey
Step 1: Gently mix berries with Raspberry Balsamic Vinegar and sugar.
Step 2: Cover and refrigerate for 1 hour.
Step 3: Combine mascarpone, honey, and lemon olive oil with mixer until light and fluffy (approx. 1 minute).
Step 4: Serve berries with a dollop of mascarpone and garnish w/ a sprig of mint.
Step 5: Enjoy!
Chef tip: Serve with a slice of angel food cake for an extra treat!
