Valentine’s Day Rosemary Olive Oil Rack of Lamb
Inspired by “Valentine Dinner for Two” from the February 1977 issue of Glamour magazine, this elegant (and SUPER easy) romantic Rack of Lamb dinner features our Rosemary Olive Oil. Though this recipe serves two, it can easily be increased to serve more! We hope you have a lovely meal!
Valentine’s Day Rosemary Olive Oil Rack of Lamb Ingredients:
▪️ 1 (1–1 1/2-pound) rack of lamb, fat cap scored
▪️ 1 garlic clove, finely chopped
▪️ 2 tablespoons Coronado Taste of Oils Rosemary Olive Oil
▪️ 2 teaspoons chopped fresh rosemary
▪️ 1/8 teaspoon freshly ground black pepper
▪️ 1 1/4 teaspoons kosher salt, divided
Directions:
1. Preheat oven to 425°F
2. Rub lamb with garlic, rosemary, pepper, and 1/2 tsp. salt.
3. Transfer to a rimmed baking sheet
4. Roast until an instant-read thermometer inserted into the thickest part of the lamb registers 125°F for medium-rare
