Chicken Lettuce Wraps
Chicken Lettuce Wraps with mango and cilantro are a fresh and healthy way to enjoy chopped chicken salad. There’s no mayonnaise, just lime juice and white balsamic vinegar reduction. Use large lettuce leaves and drizzle with Sriracha for a perfect blend of flavors!
Ingredients
4 cups chopped cooked chicken
3 scallions, chopped
1 jalapeno, minced
1 ½ cups chopped mango
½ cup chopped cilantro
½ cup chopped cashews
1 avocado chopped (optional)
Zest and juice from one lime
2 tablespoons Coronado Taste of Oils A-Premium White Balsamic Vinegar
Salt and pepper

Directions:
Place all ingredients in a large bowl and mix well.
When ready to serve your chicken lettuce wraps, add chopped avocado (if using) to the chicken mango salad and gently stir, then place a spoonful on a lettuce leaf.
Drizzle with Sriracha sauce and serve.
Store in refrigerator.
