Apricot Balsamic Moroccan Apricot-Carrot Smoothie
Ingredients
8 medium carrots (about 8 oz. or 250 g)
2 cups (about 1/2 liter) orange juice
1⁄4 cup Coronado Taste of Oils Apricot Balsamic
1 tsp. minced ginger
Rose water (optional)*
ice
apricot brandy (optional)
Mint leaves for garnish
Directions:
Peel (or scrub really well) the carrots and cut them into chunks.
In a blender, process the carrots and about half of the orange juice for 45 seconds on high speed, until smooth.
Add the remaining juice, Coronado Taste of Oils Apricot Balsamic and ice, and process again to blend well.
If using brandy, add now and pulse until combined.
*For traditional Moroccan flavor, stir in a small amount (about 1/2 teaspoon per glass) of rose water.
Pour into glasses, top with a sprig of mint.
