Fresh & Spicy Baklouti Green Chili Pepper Olive Oil Cherry Tomato Soup
Ingredients
3-4 cups cherry tomatoes
1 large onion (rough chop)
2 heads of garlic (slice about 1/4 inch off the tops)
Salt & pepper to taste
2 Tablespoons Coronado Taste of Oils Baklouti Green Chili Pepper Olive Oil
5-6 large Basil leaves
Shaved Parmesan cheese
Smoked almonds
Directions:
Spread first 3 ingredients onto large baking sheet.
Massage Coronado Taste of Oils Baklouti Green Chili Pepper Olive Oil into veggies and sprinkle with salt & pepper.
Place baking sheet into 350 degree oven for 35 minutes.
Let cool.
Using a food processor, puree tomatoes, onions and “squeezed out” garlic cloves.
Add enough water for desired soup consistency (about 3/4 cup).
Spoon into soup bowls and sprinkle shaved Parmesan cheese, chopped basil, and Smoked Almonds into soup and Enjoy!
