Lemon Balsamic Baklouti Baby Potatoes with Roasted Red Peppers
2 lbs Baby Potatoes halved
1/3 cup Sicilian Lemon Balsamic Vinegar
3 tablespoons of Coronado Taste of Oils Baklouti Green Chili Olive Oil
1/2 cup roasted red peppers (available at CTO) roughly chopped
Sea salt & fresh cracked pepper to taste
Preheat oven to 375
In a large bowl whisk the Coronado Taste of Oils Baklouti Green Chili Olive Oil and Sicilian Lemon Balsamic Vinegar together.
Add potatoes & toss to coat.
In large roasting pan arrange potatoes in a single layer, drizzle with remaining marinade.
Sprinkle with sea salt and fresh cracked pepper.
Roast potatoes for 30-35 minutes, stirring few times until golden brown and caramelized.
Add chopped roasted red peppers.
