Basil Olive Oil Blackberry Ginger Balsamic Chicken
3 T. Coronado Taste of Oils Basil Olive Oil
4 chicken breasts (skin on)
1/2 tsp salt and pepper
1/2 cup Coronado Taste of Oils Blackberry Ginger Balsamic Vinegar
Heat oven to 350 degrees
In an oven safe pan with a lid, drizzle Coronado Taste of Oils Basil Olive Oil.
Sprinkle salt and pepper on both sides of each chicken breast.
Place chicken, skin side down into a heated pan.
Sear for about 4 minutes on each side.
Pour the Coronado Taste of Oils Blackberry Ginger Balsamic Vinegar into the pan, cover with the lid and place in the oven.
Cook chicken in the preheated oven for about 20 minutes, until juices run clear.
Serve with basmati rice.
