Black Cherry Balsamic-Blood Orange Olive Oil Farrow Salad
Ingredients
4 cups “hearty” mixed salad greens (like arugula, kale, radicchio)
1 cup cooked farrow
3/4 cup Walnuts, chopped
2 stalks celery, diced
1/2 cup dried, tart cherries
1 scallion, chopped
1/2 cup Shaved Parmesan
1⁄4 cup Coronado Taste of Oils Blood Orange Olive Oil
1/4 cup Coronado Taste of Oils Black Cherry Balsamic
1 tsp. EACH fresh thyme, minced, and honey
Salt & pepper to taste
Directions:
Mix first 7 ingredients gently in large serving bowl.
For vinaigrette, combine Coronado Taste of Oils Blood Orange Olive Oil Coronado Taste of Oils Black Cherry Balsamic, honey, thyme and salt & pepper to taste.
Shake well and pour over salad, toss gently and serve.
