4 ounces goat cheese
1 clove garlic
2 Tablespoons Coronado Taste of Oils Herbs de Provence Olive Oil
3 firm pears, cut in half & cored
1 1/2 cups chicken broth
1 cup dried cherries
3/4 cup Coronado Taste of Oils Black Cherry Balsamic
3 Tablespoons agave nectar
6 boneless Mix goat cheese & garlic clove in small bowl.
Place rounded tablespoon of cheese mixture into each pear.
Puree chicken broth, dried cherries, Coronado Taste of Oils Black Cherry Balsamic, Coronado Taste of Oils Herbs de Provence Olive Oil & agave nectar until smooth.
Pour thru strainer and discard solids.
Pour half the cherry sauce into a glass casserole dish (13x9x2).
Place chicken over cherry sauce.
Place pears (cut side down) over each chicken breast.
Drizzle with remaining cherry sauce.
Cover with foil and bake for 20 minutes at 375 degrees.
Remove foil and bake for an additional 35 minutes.
Serve & enjoy.
