4 cups “hearty” mixed salad greens (like arugula, kale, radicchio)
1 cup cooked farrow
3/4 cup almonds, slivered
1 cucumber, seeded and diced
1/2 cup blueberries
1 scallion, chopped
1⁄4 cup Coronado Taste of Oils Thyme Olive Oil
1/4 cup Coronado Taste of Oils Blueberry Balsamic
1 tsp. fresh thyme, minced
1 tsp. honey
Salt & pepper to taste
Mix first 7 ingredients gently in large serving bowl.
For Coronado Taste of Oils Blueberry Balsamic, combine oil, vinegar, honey, thyme and salt & pepper to taste.
Shake well and pour over salad, toss gently and serve.
