2 cups fresh blueberries
1/4 cup Coronado Taste of Oils Blueberry Balsamic
2 T. Coronado Taste of Oils Lemon Olive Oil
1 T. honey
3 T. ketchup
1 clove garlic, minced
2 lbs. boneless, skinless chicken breasts
Place 1st 6 ingredients in medium, nonstick saucepan & bring to boil.
Reduce heat and simmer for 15 minutes.
Remove from heat and transfer to blender.
Puree until smooth.
Pour 1/3 of blueberry sauce into a ziploc bag, add chicken and marinate for at least 1 hour (set aside remaining sauce for dressing).
Heat grill or indoor grill pan.
When hot, grill chicken 4 minutes per side (discard marinade).
Warm remaining blue berry sauce & serve over cooked chicken and fancy greens.
