1 ripe pineapple
Vinaigrette whisk together
2 Tbl. Coronado Taste of Oils Pineapple Balsamic
2 Tablespoons Coronado Taste of Oils Cayenne Pepper Olive Oil
1 tsp. honey
1 tablespoon torn Basil leaves
Preheat the oven to 350 degrees.
Cut off the very top of the pineapple.
Place pineapple in a roasting pan.
Roast the whole pineapple for about 1 hour.
As soon as it is cool enough to handle, cut it first into 8 thick rounds, crosswise.
Cut these slices in half and arrange on a platter.
Drizzle with vinaigrette and sprinkle with Basil leaves.
Try it with vanilla Ice Cream.
