Roasted Almond and Honey Ginger Balsamic Chinese Chicken Salad
1/2 cup Coronado Taste of Oils Honey Ginger Balsamic
4 Tbls Jalapeno Jam Juice of one lime
1 Tbls toasted sesame seeds
1 clove garlic, minced
Whisk dressing ingredients together.
4 chicken breasts
1 head Napa cabbage, chopped
1 head Romaine lettuce, chopped
1 carrot cut into match sticks
6 green onions cut into matchsticks
1/2 cup toasted almonds
Place chicken and 1/2 of the dressing in a Ziploc bag.
Marinate for 1 hour, cook in oven at 350o for 20 minutes.
Allow to cool, and then slice.
Combine next 4 ingredients, toss with dressing.
Plate greens and place one sliced chicken breast on salad and sprinkle with almonds and minced green onions.
