Cilantro and Roasted Onion Olive Oil – Sicilian Lemon Balsamic Baby Red Potatoes

 


Ingredients

2 lbs Baby Red Potatoes halved
1/3 cup Coronado Taste of Oils Sicilian Lemon Balsamic
3 tablespoons of Coronado Taste of Oils Cilantro and Roasted Onion Olive Oil
3” sprig fresh Thyme leaves stripped from stem


Directions:

Preheat oven to 375
In a large bowl whisk the Coronado Taste of Oils Cilantro and Roasted Onion Olive Oil and Coronado Taste of Oils Sicilian Lemon Balsamic together.

Add Thyme and Red Potatoes & toss to coat.

In large roasting pan arrange potatoes in a single layer, drizzle with remaining marinade.

Sprinkle with sea salt and fresh cracked pepper.

Roast potatoes for 30-35 minutes, stirring few times until golden brown and caramelized.
