Cilantro and Roasted Onion Olive Oil-Toasted Sesame Oil Hummus
2 cans 15 oz garbanzo beans drained
2 cloves garlic, chopped
2 large red onions , each sliced into 8 pieces
juice of 2 lemons
3/4 tsp ground cumin
1/2 tsp salt
1/2 tsp. pepper
2 Tbsp. Coronado Taste of Oils Toasted Sesame Oil
1/2 cup Coronado Taste of Oils Cilantro and Roasted Onion Olive Oil, divided use
1 cup fresh cilantro
Place sliced and separated red onions, drizzled with 1/4 cup Coronado Taste of Oils Cilantro and Roasted Onion Olive Oil, on a cookie sheet in a preheated to 300^ oven.
Roast for one hour turning about 3 times so they roast evenly.
While onions are roasting, place remaining ingredients in a food processor and pulse until just mixed.
When onion are cooled, add to processor and pulse until thoroughly combined…you will see small chunks of onion—-which is great!
Garnish with Cilantro and serve with crackers, pita or veggies for a uniquTae and delicious appetizer!
