Cranberry Pear Balsamic and Mushroom Sage Olive Oil Bread Stuffing
Ingredients
1 stick butter
2Tbl. Coronado Taste of OIils Mushroom Sage Olive Oil
2 cups chopped onions
2 apples chopped
1 cup dried cranberries
2 cups diced celery
1Tbl. Fresh minced Sage and Thyme
3 cups Low Sodium Chicken broth
2Tbl. Coronado Taste of Oils Cranberry Pear Balsamic
2 eggs
1⁄4 cup fresh chopped parsley
16 cups stale sour dough bread cut into cubes
Directions:
Melt 6Tbl. of butter with Coronado Taste of OIils Mushroom Sage Olive Oil.
Add onions, apples, dried cranberries , celery & sage and thyme and cook for 5 minutes.
Add 3 cups broth and Coronado Taste of Oils Cranberry Pear Balsamic & bring to simmer.
In separate bowl, beat eggs with parsley and mix into cubed, stale bread, then pour into broth mixture.
Transfer to large baking dish and dot with last 2Tbl.
Butter. & cover with foil.
Bake at 375 for 30 minutes.
Uncover, and bake for an additional 30 minutes until golden.
