4 salmon fillets (4oz each)
2 Tbsp. Coronado Taste of Oils Dill Olive Oil
3⁄4 cup thin strips peeled carrots
8 stalks medium asparagus, cut into 4 inch lengths
1 lemon, sliced into 1/4 inch
Preheat grill to 425o.
Tear off 4 sheets of foil.
Place 1 fillet in the center of each piece of foil, drizzle with Coronado Taste of Oils Dill Olive Oil and sprinkle on salt & pepper.
Lay lemon slices on top, followed by the asparagus and carrots.
Fold foil over and seal tightly.
Place foil packetson grill for 15 minutes (until fish flakes easily).
Transfer to plates and serve over rice!
