Sicilian Lemon Balsamic and Extra Virgin Olive Oil Devil’s Rain Pasta Salad

 


Ingredients

4 ounce Rossi Pasta Fire! (The Devil’s Angel Hair)

2 cups Bibb lettuce
2 medium ripe tomatoes
1/2 cup giardiniera (spicy pickled veggies)
2 tablespoon capers, drained

1/4 cup kalamata olives, pitted and halved
** Add one of the following:
2 grilled chicken breasts or 1/2 lb. grilled fish
grated parmesan
Dressing Ingredients
2 tablespoons Coronado Taste of Oils Sicilian Lemon Balsamic

6 tablespoons Coronado Taste of Oils Extra Virgin Olive Oil
salt and pepper to taste


Directions:

Preparation

While water comes to a boil to cook the pasta, combine all ingredients except the pasta and dressing.

Combine the dressing ingredients in a small jar, seasoning to taste.

Cook the pasta according to package directions.

Drain well.

Pour the hot and well-drained pasta over the salad ingredients.

Pour the dressing over everything and mix well.

Top with the optional ingredients.

Serve immediately
