1lb large shrimp (21/25’s) tails off
1/4 cup + 2 Tablespoons Coronado Taste of Oils Dill Olive Oil
2 cloves garlic, minced
1/2 cup pine nuts (toasted)
2 avocados, sliced
Soft goat cheese, sliced
1 bag pasta (your favorite)
Preheat oven to 400 degrees.
Toss Shrimp w/ 2 tablespoons Coronado Taste of Oils Dill Olive Oil & minced garlic.
Roast for 5-7 minutes (or until pink).
Add pine nuts to small frying pan, and toast until you smell the nut aroma. (should be golden brown).
Cook pasta according to package directions.
When done, gently scoop pasta into large serving bowl.
Add 1/4 cup Coronado Taste of Oils Dill Olive Oil, shrimp, avocado and goat cheese and toasted pine nuts to large bowl, toss and serve!
