Sicilian Lemon Balsamic Edamame Hummus
Ingredients
2 cups frozen shelled Edamame, cooked according to package directions
1 cup silken Tofu
1⁄2 tsp. kosher salt + pinch of pepper
1 1⁄2 T. ground Cumin
3 cloves garlic, minced
1⁄4 cup fresh, Coronado Taste of Oils Southern Hemisphere High Polyphenol Extra Virgin Olive Oil
(Picaul or Barnea Olives)
1/3 cup Coronado Taste of Oils Sicilian Lemon Balsamic
Fresh veggies and toasted Pita chips
Directions
Place all ingredients in food processor and process for 2 minutes until smooth.
Refrigerate for at least 2 hours before serving. Serve with fresh veggies and pita chips.
