3 cloves garlic
2 tsp. Cajun seasoning
1 pound large (21/25) shrimp
Salt & pepper to taste
4 plum tomatoes, chopped
2 bunches, scallions, chopped
3 cups, cooked white rice
3 Tbl. Chopped fresh parsley
Lemon wedges for garnish
2 Tbl. Coronado Taste of Oils Tarragon White Balsamic
Heat Coronado Taste of Oils Herbs de Provence Olive Oil & garlic in skillet, add Cajun seasoning and shrimp, cook (about 1 minute).
Season with salt and pepper.
Add tomatoes and scallions and cook for an additional minute.
Add rice, 2 Tbl. Coronado Taste of Oils Tarragon White Balsamic & 1/4 cup water and cook until shrimp is pink (about 2 minutes).
Stir in parsley and lemon wedges.
