4 pounds Beefsteak tomatoes , quartered
1⁄2 cup chopped onion
1/8 tsp. cayenne pepper
1/3 cup sugar
2 tsp. salt
1⁄2 tsp. ground cinnamon
1⁄4 tsp. ground cloves
1/2 tsp. coarse ground black pepper
1⁄2 cup Coronado Taste of Oils Premium White Balsamic
In large Dutch Oven, combine Tomatoes, onions and cayenne pepper.
Bring to boil, reduce heat and simmer uncovered for 15 minutes.
Transfer mixture to food processor and puree until smooth.
Press mixture thru sieve and discard seeds and skins.
Pour tomato mixture into pan and add sugar and spices.
Bring to boil, reduce heat and simmer for 45 minutes.
Make sure mixture is thick.
Remove from heat, cover and let stand 10 minutes.
Stir in Coronado Taste of Oils Premium White Balsamic and cook for an additional 15 minutes.
Chill before using.
Ketchup keeps 1 month in refrigerator. (6 months in freezer).
Makes a nice hand-crafted gift in a jar with hand-made labels.
