Jalapeno Balsamic Lemon Olive Oil Tropical Gazpacho Recipe

Jalapeno Balsamic & Lemon Olive Oil Tropical Gazpacho

 


Ingredients

4 cloves garlic minced

1 1⁄2 cups diced cucumber
1 1⁄2 cups red bell peppers, diced

1⁄2 red onion, diced
1 – 28oz can whole Roma tomatoes

1 1⁄2 cup fresh diced pineapple
2 Tbls. Coronado Taste of Oils Jalapeno Balsamic

1⁄4 cup Coronado Taste of Oils Lemon Olive Oil
1 tsp. cumin
1 1⁄2 cup french bread torn into chunks
Cayenne pepper to taste
Add water for desired consistancy


Directions

In Blender or food processor, combine garlic, 1 cup each: cucumber, red bell pepper, pineapple and all the red onions and Roma Tomatoes in juice, Coronado Taste of Oils Jalapeno Balsamic, cumin, bread , cayenne pepper and Coronado Taste of Oils Lemon Olive Oil.

Transfer to bowl and stir in remaining diced veggies.

Refrigerate for at least 2 hours.
Serve and enjoy!
