Chipotle Olive Oil -Mango Balsamic BBQ ChickenMissy - Blissbranding Digital Specialist
1 1/2 cups fresh mango (chopped)
3/4 cup fresh cilantro (rough chop)
4 T. Coronado Taste of Oils Mango Balsamic
2 T. Corondo Taste of Oils Chipotle Olive Oil
4 cloves garlic peeled
2 chipotle peppers + 1 T. adobo sauce
1 tsp. salt
1 tsp. pepper
2 lbs chicken thighs (skin on, bone in)
Put 1st 8 ingredients in food processor and puree until smooth.
Add Chicken Thighs with half the sauce in ziploc bag. Marinate in fridge for at least 6 hours.
Put remaining half of the sauce in small pot & simmer until thick (approx. 15 mins.) Preheat oven to 400 degrees.
Place Chicken Thighs on large oven safe tray.
Bake for 1 hour.
Transfer chicken to platter and serve with warm Mango sauce over rice or greens. YUM!
