Extra Virgin Olive Oil Jam Recipes for Chicken
4 Chicken thighs, washed & patted dry
Salt & pepper to taste
4 Tablespoons Mango Jalapeno Jam
Coronado Taste of Oils Extra Virgin Olive Oil (your favorite flavor)
1/2 cup white wine
Preheat oven to 375 degrees.
Using an oven-safe pan over medium-high heat, sear chicken on each side until browned, about 5 minutes per side.
Place into oven and roast, covered, about 30-40 minutes.
Carefully remove from oven and put a tablespoon of jam on each piece of chicken.
Continue to roast about 10 more minutes, until done.
Remove chicken to a platter to rest, lightly covered.
Place pan over medium heat and deglaze with wine.
Stir until sauce thickens slightly.
Pour over chicken and serve.
Garnish with fresh mango slices, if desired.
