Maple Balsamic Walnut Oil Beet Salad
4 medium beets, scrubbed and cut in half
1/4 cup frozen orange juice concentrate
1/4 cup Coronado Taste of Oils Maple Balsamic
1/4 cup Coronado Taste of Oils Walnut Oil
crumbled goat cheese
Place beets in sauce pan and cover with water.
Bring to boil and cook until tender (approx 30 min).
Peel, drain and cool.
While beets are cooking place walnuts in skillet and warm until toasted.
Place a large heaping handful of greens on 4 salad plates.
Dress each plate with toasted walnuts, crumbled goat cheese and sliced beets.
Drizzle with dressing and enjoy!
