Honey Ginger Balsamic Orange Szechuan Chicken Stir-fry in Wonton Cups
Ingredients
1 rotisserie chicken breast, cubed
Carrots
Green Onions
Red, yellow, orange sweet mini bell peppers
Firm tofu (if desired)
Shelled Edemame
6 oz. Angel Hair pasta, cooked to package directions
1⁄2 Cup Coronado Taste of Oils Honey Ginger Balsamic
Directions
In a small saucepan, place Coronado Taste of Oils Honey Ginger Balsamic over low heat and reduce by half.
Set aside.
Slice all vegetables (except edemame) on the bias and set aside.
In a large skillet over med-high heat, add carrots and stir 1-2 minutes.
Add the chicken, then all other veggies until well combined and cooked to desired crispness.
Fold in tofu and add Honey Ginger reduction.
Garnish with almonds, if desired.
