Basil Olive Oil & Pineapple Balsamic Marinated Tilapia w/ Tropical Fruit Salsa
Ingredients
1/4 cup Coronado Taste of Oils Pineapple Balsamic + 2 T. divided use
1/4 cup Coronado Taste of Oils Basil Olive Oil + 3 T. divided use
1 teaspoon fresh grated ginger
1 teaspoon minced garlic
Salt & pepper to taste
4 Tilapia fish fillets
1/4 cup EACH, fresh chopped pineapple, bananas, mango & avocado
1 lime juiced
Directions
Marinade
whisk 1/4 cup each Coronado Taste of Oils Pineapple Balsamic & 1/4 cup Coronado Taste of Oils Basil Olive Oil with ginger and garlic.
Pour into plastic bag and add fish, marinate for 1 hour.
Salsa
Gently combine chopped fruit with 1 T. Each Coronado Taste of Oils Pineapple Balsamic and Coronado Taste of Oils Basil Olive Oil.
In large, non stick skillet, heat 2 T. Coronado Taste of Oils Basil Olive Oil , sauté Tilapia on medium heat for 3-4 minutes on each side (until golden brown)
Serve with fresh fruit salsa.
