2 pints blueberries (rinsed and drained).
1/2 Tablespoon Coronado Taste of Oils Blueberry Balsamic
1 T sugar. 6 ripe peaches, sliced.
2 T. Coronado Taste of Oils Peach Balsamic.
1/3 cup sugar or 1 Tablespoon agave nectar may be used in place of sugar.
8 ounces mascarpone,
2 tablespoons Coronado Taste of Oils Meyer Lemon Olive Oil.
1 tablespoon lemon honey.
1 tablespoon lemon zest (2 lemons).
1 bunch fresh mint leaves for garnish (optional)
Gently mix berries with Coronado Taste of Oils Blueberry Balsamic and sugar, refrigerate.
Mix sliced peaches with sugar and Coronado Taste of Oils Peach Balsamic and cover and refrigerate for one hour.
With an electric mixer combine mascarpone, Coronado Taste of Oils Meyer Lemon Olive Oil, honey and zest until light and fluffy.
Approximately 1 minute.
Serve berries with a dollop of mascarpone and garnish with a sprig of mint.
Excellent served with a slice of angel food cake.
