2 ears corn, grilled for 4-5 minutes
3 Roma tomatoes, diced
1 large or 2 small ripe avocados
3 Tbsp. minced parsley (or cilantro)
3 Tbsp. Coronado Taste of Oils Persian Lime Olive Oil
juice from 1 lime
1/2 tsp. salt
1/4 tsp. black pepper
1/4 to 1 whole minced jalapeño, depending upon heat preference (optional)
Grill the corn until crisp-tender. (So it still has some crunch).
Cut off the kernels and add to a large bowl.
Dice the tomatoes and add to the corn.
While corn is cooling, prepare the dressing.
Add the avocado, lime juice, Coronado Taste of Oils Persian Lime Olive Oil, parsley, salt and pepper in a small food processor.
Pulse until smooth and creamy.
Pour over the corn and tomatoes, mix gently and serve.
