Roasted Walnut Oil, Espresso Balsamic, Almond and Black Cherry Biscotti

 


Ingredients

2 T Coronado Taste of Oils Roasted Walnut Oil plus 2 T Coronado Taste of Oils Extra Virgin Olive Oil (mild in flavor)
3/4 cup sugar
2 tsp vanilla
2 eggs
1 tsp Coronado Taste of Oils Espresso Balsamic
13/4 cups all-purpose flour
1/4 tsp salt
1 tsp baking powder
1 cup dried cherries and 1 cup slivered almonds then add cherries and almonds (or walnuts)


Directions

Preheat oven to 350 degrees.

Mix together: Coronado Taste of Oils Roasted Walnut Oil & Coronado Taste of Oils Extra Virgin Olive Oil, sugar, vanilla, eggs and Coronado Taste of Oils Espresso Balsamic.

Add dry ingredients then add cherries and almonds until well combined.

Separate batter into two logs and place onto a parchment lined baking sheet .

Smooth out into two , two inch wide logs.

Bake for 35-40 minutes…until golden brown.

Remove from oven and let cool for at least 10 minutes.

Reduce heat to 275 degrees.

Slice logs into 1/2 inch thick pieces.

Place slices onto baking sheet and cook for an additional 10 minutes or until dry.
Cookies will be light and delicious.

Serve with a cup of Joe in the morning!
