Basil Olive Oil & Peach Balsamic Roasted Shrimp Burritos

 


Ingredients

1lb large shrimp (21/25’s) tails off
2 Tablespoons Coronado Taste of Oils Basil Olive Oil
2 cloves garlic, minced
2 T Coronado Taste of Oils Peach Balsamic

1 bag fancy greens
2 avocados, sliced
Soft goat cheese, sliced
8 inch flour tortillas


Directions

Preheat oven to 400 degrees.

Toss Shrimp w/ 2 tablespoons Coronado Taste of Oils Basil Olive Oil and roast for 6-7 minutes until pink.

Warm tortillas gently.
Fill each tortilla with 3-4 cooked shrimp, greens, avocado and goat cheese.
