Olive Oil Cake
For the cake:
- 3 eggs
- 1 ¼ cups Coronado Taste of Oil Blood Orange Oil
- 1 cup milk, low fat preferred but not required
- 1 Tbsp orange zest, not required
- 1 ½ cups sugar
- 2 cups all-purpose flour
- ¾ tsp baking soda
- ¾ tsp baking powder
- 1 tsp salt
For the glaze:
- 2 Tbsp Coronado Taste of Oil Cara Cara Orange Balsamic
- 1 cup powdered sugar
- Garnish – candied orange peel or berries if desired
Preheat oven to 350 degrees. Grease 9 inch springform pan with Coronado Taste of Oil Blood Orange Oil. In large bowl, whisk together eggs, oil, milk and orange zest until well blended. In another bowl, mix dry ingredients. Whisk dry ingredients into wet ingredients, adding a little at a time until well blended. Pour into greased cake pan and bake for 55 minutes or until golden brown and toothpick inserts into the center and comes out clean. Remove from oven, run a knife around the end and remove springform. Let cool. Run knife along bottom of pan base and slide onto cake plate.
To make the glaze: Put powdered sugar into bowl, whisk a small amount of vinegar at a time into sugar to create glaze. Do not add too much at a time or it may become runny. Garnish with candied orange peel or berries.
