DIRECTIONS: bring 3 ¼ cups and 2 or more tbsp oil to a boil in large non-stick skillet or pan.
Add the contents of the package and stir over low/medium heat for 1 minute. Cover and cook over UNTIL MOST OF THE WATER HAS BEEN ABSORBED (about 16-18 minutes). Add more water and keep cooking for a softer texture. Stir spontaneously at convenience during cooking. The sauce should be creamy when fully cooked. Season to taste, drizzle with olive oil and add optional grated cheese before serving.
SUGGESTIONS: stir in 80g of pan-fried diced ham (or your favorite protein), grated Pecorino cheese and black pepper.
WINE PAIRING: Your favorite rosé, or still, medium-bodied wines.
