Pennette “Positano” zucchini & saffron

DIRECTIONS: bring 3 cups of water and 2 or more tbsp olive oil to a boil in a large non-stick skillet or pan. Add the contents of the package and stir over medium heat for 1 minute. Cover and cook UNTIL MOST OF THE WATER HAS BEEN ABSORBED (about 10-12 minutes). Add more water and keep cooking for a softer texture. Stir spontaneously at convenience during cooking. Season to taste, add grated cheese and olive oil before serving.


SUGGESTIONS: Add 1/2 glass of wine during cooking and add 6 minced shrimps (or your favorite protein) before serving.


WINE PAIRING: Chardonnay or other white, light body wines.
