Sicilian Cous Cous with Vegetables

DIRECTIONS: Bring 17 fluid ounces (550 ml) of water and 2 or more tbsp oil to a boil in a large non-stick skillet or pan. Add the contents of the package and stir over medium heat for 1 minute. Cover and cook UNTIL MOST OF THE WATER HAS BEEN ABSORBED (about 7-9 minutes). Add some more boiling water for a softer doneness. Season to taste and serve drizzled with olive oil.
SUGGESTIONS: season with ½ tsp vinegar and serve with diced swordfish rolled in sesame seed and fried (or try your favorite protein!).
WINE PAIRING: Cabernet Sauvignon or red, still, medium body wines.
